Have the defences of the major players in Italy have become somewhat shabby?
Once upon a time Italian teams would grind out a hell of a lot of 1-0 wins.
Now conceding goals is the "IN THING" in Italy
Milan 3 games - conceded = 7 goals
Inter 3 games - conceded = 5 goals
Lazio 3 games - conceded = 6 goals
After 2 rounds of the Serie A only Udinese and Catania can boast 2 clean sheets.
Having said that 7 teams kept clean sheets last round!!!!!!!!!
The Serie A has become a more attacking league of late.
Is it to do with systems? calibre of players? quality of stikers of opposition teams? OR are they getting found out

Things fluctuate, systems come and go, different teams come along with different ideals, and of course it is still early in the season.
Some statistics I picked out from random seasons regarding 1-0 scorelines, since you brought it up.
1933/34 (Juventus) - 40 1-0 wins, 13.07%. 14 0-1 wins, 4.58%
1946/47 (Torino) - 39 1-0 wins, 10.26%. 25 0-1 wins, 6.58
1964/65 (Inter win the scudetto with catenaccio their main system) - 50 1-0 wins, 17.32%. 21 0-1 wins, 7.84%
1969/70 (Cagliari) - 44 1-0 wins, 18.33%. 21 0-1 wins, 8.75%
1975/76 (Torino) - 31 1-0 wins, 12.92%. 20 0-1 wins, 8.33%
1977/78 (Juventus) - 28 1-0 wins, 11.67% (interesting, 2-0 wins close at 25). 14 0-1 wins, 5.83%
1986/87 (Napoli) - 39 1-0 wins, 16.25%. 24 0-1 wins, 10%
